Danza Peru

So, it appears we didn't have enough on our plate as I have gone and added dance to the weekly mix. E has been anxious to join a dance class. She loves dancing. I am so lucky that the Peruvian dance class doesn't already conflict with E's jam-packed schedule.

On the subject of jam, sort of, our relish project last weekend turned out pretty good. Maybe not quite as good as Mrs. F's but it does come pretty close!! :) :) I am so pleased, pickled even. Which is sort of what relish really is, as it turns out.

Here is the recipe for any and all who may be interested in making some of the yummiest relish I have ever tasted:

Mrs F's Famous Relish

2 qts sliced/chopped cucumbers (about 9 cups)
1 qt chopped onions (about 4 cups)
1 qt chopped green tomatoes
3 medium shredded cabbages (if using large, 1.5 will do)
sprinkle 1/2 cup coarse salt between layers and on top and let stand overnight (you will need a really large pot, a nice big stock pot)
drain and add 1 qt vinegar
bring to a boil for 5 minutes
dressing is 8 cups sugar, 2 teaspoons of tumeric, 1 cup flour, 2 oz (about 4 tablespoons) celery seeds in 1 cup vinegar. Pour in with vegetables and vinegar. Cook until thick (bring to a boil for a few mins only so you don't lose the "crunch").
Prepare jars, lids and covers. Don't boil the jars after filling them as this will cook the relish even more and give it the texture of sauerkraut but it will still taste like relish though.
This recipe will yield about 15 - 500mL jars.
