Day 8

Princess ring - Ariel the Little Mermaid

I have 5 more of those princess rings. They come in a pack of 7 (one for each day of the week) at the Dollar Store. E was happy to get another, she will be thrilled when the other 5 show up. I even have a cute little ring holder that will accompany the last one.

This morning, I gave E a little piece of the fudge we made the other day. It is so good. I was tempted to put it in her advent calendar but since she helped make it, a piece of fudge wouldn't have been much of a surprise. This fudge is super easy to make and it is amazing! We didn't add the nuts and only boiled the sugar/milk for 4 minutes.

Here is the recipe we used from Carnation:
Carnation® Classic Five-Minute Fudge
Description: Carnation® cooks created this candy recipe in the early '60s. It's one of the first fudge recipes that didn't require a thermometer. It's easy, delicious and is sure to become one of your favourites – it's our most requested Carnation® recipe!

Ingredients Preparation
1-2/3 cups [400 ml] granulated sugar

2/3 cup [150 ml] Carnation® Evaporated Milk

2 tbsp [30 ml] butter

1/2 tsp [2 ml] salt

2 cups [500 ml] miniature marshmallows

1-1/2 cups [375 ml] semi-sweet chocolate chips

1 tsp [5 ml] vanilla

1/2 cup [125 ml] chopped walnuts (optional)

Line 8-inch (2 L) square baking pan with waxed paper; set aside

Combine sugar, evaporated milk, butter and salt in medium saucepan; bring to rolling boil over medium heat, stirring constantly. Boil 4 to 5 minutes or until mixture starts to thicken. Remove from heat. Stir in marshmallows, chocolate chips, vanilla and nuts (if desired) until marshmallows and chocolate melt and blend.

Pour into prepared pan. Chill until set. Cut into 1-inch (2.5 cm) squares. Store in refrigerator in sealed container.

TIPS:
• For variety, substitute 1/2 cup (125 ml) dried fruit, chopped toasted almonds or hazelnuts for the walnuts.
